I talked in another post about how much cheese seems to be a sticking point with vegans, and how missing cheese led me to post this easy vegan cheese sauce recipe as well as this nut-free vegan parmesan recipe.
There are so many ways to use vegan cheese sauce – from smothering over nachos, to using as the base for raw veggie dips and of course, vegan mac ‘n’ cheese!
Vegan parmesan is also great for sprinkling over pasta dishes or gratins, and it gives and extra savoury punch to salads, veggies dishes mac ‘n’ cheese.
My 7 year old helped me make this mac ‘n’ cheese and she and her sisters wolfed down every bite! Because it’s so rich and creamy I like to serve it with chopped raw carrots, cucumber, peppers and baby tomatoes for that nice fresh crunch and juiciness.
You can either serve it quickly as-is, or put it into a baking dish and crisp it up a bit in the oven. Either way it’s a great hearty plant-based meal and a super easy vegan recipe for kids to make; a great way to get them cooking and connecting with their food!
I love vegan recipes that use 5 ingredients or less- it just makes everything easier. For this recipe all you need is a batch of my vegan cheese sauce, some macaroni (gluten free if needed) and some vegan parmesan. That is it! Simply cook the pasta, mix it with the cheese sauce and top with the parmesan. Use the rest of the cheese for nachos and a simple potato gratin for more dinners the rest of the week.
You can do a hidden vegetables version of this vegan mac ‘n’ cheese, but that requires a different sauce with blended cauliflower etc, and I prefer to just do a basic sauce and serve veggies on the side.
- 1 batch vegan cheese sauce
- 1 1/2 cups macaroni (gluten free if needed)
- 1/3 cup vegan parmesan cheese
- Prepare the vegan cheese sauce according to recipe
- Prepare the parmesan cheese according to the recipe
- Cook the macaroni until al dente according to packet instructions
- Mix the cooked pasta with the cheese sauce and top with the vegan parmesan
- Serve and enjoy!
