Mmm, cheese. The sticking point for so many of us when transitioning to a vegan diet is cheese. Creamy cheese, sharper cheese, blue cheese… pretty much any cheese, come to think of it. That’s why I’m thrilled with this vegan parmesan cheese recipe that is 100% nut free.
It packs the savoury punch of parmesan and has just 3 ingredients! Yep, three. Easy peasy.
These ingredients can be picked up in any large food store and are some of the few ingredients that I’d recommend on any beginner vegan’s shopping list as store-cupboard essentials. When I first explored vegan food I was wary of things I hadn’t heard of (such as nutritional yeast)- now they are my staples and I use them in everything!
If you don’t want to use pumpkin seeds because of allergies (or you just don’t want to haul butt to the store to get them!) you can substitute cashew nuts instead.
This tangy vegan parmesan cheese is perfect for sprinkling on pasta or meatballs, topping casseroles and vegan gratins, or as an ingredient in hot cheesy dumplings.
Simply pop the pepitas (pumpkin seeds), lemon juice and nutritional yeast in your food processor and pulse until it’s that coarse, dry texture of parmesan.
Hey presto, you have the best vegan parmesan cheese!
If you like you can add 1/2 a teaspoon of salt and 1/4 teaspoon garlic granules for extra punchy flavour.
- 1 1/2 teaspoons lemon juice
- 1/2 cup nutritional yeast
- 2 1/1 cups pumpkin seeds
- Pop the pumpkin seeds, lemon juice and nutritional yeast in a food processor
- Pulse until you have a coarse parmesan texture
- Taste and add salt and garlic granules to taste
